Nao is a member of Mikuni’s founding family and one of our most talented sushi chefs. The first Mikuni Restaurant was opened by Nao’s father, Koki Arai, in 1987, when Nao was only 15. He truly grew up behind the sushi bar, and it shows. Even his older brother Taro will tell you Nao is the better sushi chef.
He has been instrumental in designing Mikuni menus, blending Japanese tradition with American innovation. He is the inventor of unique sushi creations, including our signature “torched” rolls.
