Job Overview

Prepare dishes that comply with Mikuni recipes and standards and ensure the efficient operation of the sushi bar. Creativity, accuracy, and efficiency are key components of this position.

Primary Responsibilities

  • Set up sushi bar stations for each shift
  • Create high-quality sushi and other menu items according to portion control
  • Maintaining superior health, safety, and cleanliness standards
  • Order and receive raw materials and dry goods
  • Create specials according to restaurant standards
  • Stay current on all promotions
  • Practice excellent customer service by being able to offer information on all that Mikuni offers and to make cross-selling suggestions
  • Maintain daily production records
  • Perform monthly inventories and training of new team members as required
  • Complete opening and closing duties efficiently and safely according to procedure


  • Working knowledge of seafood and other sushi ingredients
  • Familiarity with all required cooking utensils
  • Effective communication/comprehension skills (verbal and written English)
  • Strong organizational and multi-tasking skills
  • Ability to perform basic math
  • Team player
  • Commitment to customer service
  • Work schedule flexibility
  • Ability to lift 60 pounds and to stand for an extended period of time

Education and Experience

  • High school diploma or equivalent
  • Previous related experience
  • ServSafe® certificate a plus
  • Food Safety Handler card a plus
